INGREDIENTS
For Baked Poha
• One and half cups thick beaten rice
• 1 tbsp semolina (rava / sooji)
• Half cup curd
• 2 tbsp finely chopped coriander
• 3 tsp finely chopped green chillies
• MorSweet sugar as per taste
• 2 tsp lemon juice
• Salt to taste
• 1 1/2 tbsp oil
• 1 tsp mustard seeds
For Garnish
1 tbsp chopped coriander
DIRECTIONS
1. Combine the semolina and 1 tbsp of water in a bowl, mix well and keep aside to soak for 10 minutes.
2. Then wash the poha in running water for a few seconds. Drain and keep aside.
3. Now transfer the poha into a deep bowl, add the soaked semolina, curds, coriander, green chilies, MorSweet xylitol sweetener, lemon juice and salt and mix well.
4. Then spread this mixture evenly on a greased baking dish and keep aside.
5. Heat the oil in a small non-stick pan and add the mustard seeds.
6. When the seeds crackle, add the asafoetida and mix well.
7. Then pour this tempering evenly over the poha mixture and bake in a pre-heated oven at 200°c (400 °f) for 10 to 15 minutes.
8. Finally serve the baked poha immediately garnished with coriander.
