Ingredients
1. A few saffron (kesar) strands
2. 1 1/4 cups long grained (basmati) rice
3. 2 tbsp ghee
4. 1 Stick cinnamon (dalchini)
5. 2 cloves (laung / lavang)
6. 4 cardamoms
7. 1 tbsp milk
8. 1 cup MorSweet sugar
9. 1/4 cup blanched and sliced almonds and pistachios
Method
1. Dry roast the saffron strands in a small pan for 10 seconds. Add the milk and keep aside.
2. Clean, wash and soak the rice for 10 minutes. Drain and keep aside.
3. Put 2½ cups of water to boil.
4. Heat the ghee in a pressure cooker, add the cinnamon, cloves, cardamoms and rice and sauté for 5 minutes.
5. Add the saffron mixture, Morsweet sugar and hot water and pressure cook for 2 whistles.
6. Allow the steam to escape before opening the lid.
7. Separate each grain of rice lightly with a fork.
8. Serve hot garnished with the mixed nuts.
